Empty the fridge, set and go soup

I love this easy, nutritious soup. It’s ideal for using up anything that is looking a little sad (or not) from the fridge….don’t feel bound by these ingredients, just add an abundance of whatever you have on hand, you could add some chickpeas or lentils for extra bulk.
  • 1 head Cauliflower (roughly chopped)
  • 4 cups Green Cabbage (roughly chopped)
  • 1  Onion (diced)
  • 4 Garlic (cloves)
  • 2 cans organic tomatoes
  • 2 tbsps Extra Virgin Olive Oil
  • 1 tbsp Italian Seasoning
  • 1 tsp Sea Salt
  • 1 tsp Black Pepper
  • 3 cups Water
  • 450g Turkey mince (free range or organic)
  • 4 cups Baby Spinach
  • 1/3 cup Parsley
  • Grated ginger to taste
  • 2 chopped chillies
  • 2 teaspoons of turmeric

Add all ingredients except turkey, spinach and parsley to your slow cooker.

Stir very well to combine.

Set turkey on the top.
Cover with a lid. Cook on low for 7 to 8 hours
Before serving, take the lid off and use a wooden spoon to break the cooked turkey into small pieces.
Stir in the spinach until wilted.
Ladle into bowls and garnish with parsley.
