200g pineapple pieces cut into pieces
200g banana, frozen and cut into pieces
100g celery cut into pieces
4 – 6 cm piece fresh turmeric peeled
a piece fresh ginger, peeled
3 sprigs fresh mint, leaves only, plus extra for garnishing
100g fresh baby spinach leaves
100g walnuts (soaked or activated)
300 g coconut water, plus up to 200 g extra
Place all ingredients into Thermomix or blender and whiz on high.
Add more coconut water if you prefer a thinner consistency.
